Day 20 lunch
Made a salad with tomato, grapefruit, mixed nuts, and dates. Balsamic vinegar for dressing. Had a side of the hot dog skillet I cooked the other day. Very filling lunch, especially with the larabar and plantain chips i ate right before this. I was in serious hungry mode.
Day 20 breakfast
Time had gone by fast and yet at tgw same time I feel like I have been on whole30 for a long time.
What I learned, preparation is key.
Woke up so super late this morning so I had to haul ass in order to leave on time for work. Good thing I had enough sense to pack my food the night before and packed a smoothie to go with my baked egg with smoked salmon. I added frozen berries, a banana, chia seeds, cinnamon, spinach, and coconut milk to my smoothie. yuuum
Tried to make pate. I had cooked the liver the day before and not it was ready to blend. Had a nutribullet for 6 months, gift from my mom, and finally broke it in making pate. Lol. Or rather pate mousse.
Day 19 dinner
The rotated lamb shank with plantains and zucchini.
This was not as yummy as I hoped it would be. The lamb was excellent! Soft and fall off the bone yummy. The veggies though. …well, I don’t know what I was thinking but it wasn’t the tastiest of experiments. Maybe I should have cut the zucchini bigger. .. or waited to use a ripe plantain. I used a green one thinking it would be potato like. No, it was super dry and tasteless. Should have used a ripe plantains and maybe baked it in a casserole dish with some liquid. Sigh. .. the mint and parsley did nothing to flavor the dish so this was a flop. But I love the lamb. Lol gonna have to figure out what to do with the plantain. Maybe I’ll pick it out and bake it until they’re chips.

Day 19 snack
Cucumbers, yellow bell pepper, carrots, and half an apple. I love that I’m getting more fresh fruits and veggies in my diet. It’s easier and easier to fight sweet tooth cravings.

The left over salmon and asparagus I made Sunday. Still just as good.
I hope it didnt stink up the kitchen again when I heated it up for lunch. Lol. Whoops!
Instead if going to the gym last night I decided to cook. Baked a lamb shank with plantains, zucchini, onions, mint, parsley, and cinnamon. Only have it a taste but it turned out pretty yummy. Saving that for tomorrows lunch.
The other dish is sautéed bell pepper, Baby bok choy, and beef hot dogs. Turns out my little baby bok choy wasn’t big enough. You can hardly see the green though in hindsight I suppose I could have added spinach too. Lol oh well.
These experiments are kind of cool. Im starting to like cooking even though I’m not much of a cook. =)
Day 19 breakfast
Baked eggs with smoked salmon, a grapefruit, and cherries.
Hit snooze on my alarm and woke up late. I dreamt about making macarons. Lol! It’s been so long since I last made a batch of French macarons. Must be d sugar calling my name. Lol!
Also woke up bloated with water retention. Hmm, maybe too much sodium yesterday? Dunno. Could it be the fish? Hope not because that’s what I’m having for lunch again. Lol
